Ingredients
- 1 3/4 cups all purpose flour
- 1/2 tsp baking soda
- 14 tbsp unsalted butter
- 3/4 cup dark brown sugar, packed
- 1/2 cup light brown sugar, packed
- 1 tsp salt
- 2 tsp vanilla extract
- 1 large egg plus 1 large egg yolk
- 1 1/4 cups bitter sweet chocolate chips
Directions
- 1. Sift flour and baking soda in a bowl.
- 2. In a saucepan, over medium heat, melt the butter until nutty and golden brown, 5-6 minutes, stirring frequently. Immediately transfer brown butter to a bowl as it can burn quickly. Allow to cool for 15 minutes.
- 3. Mix brown butter, dark and light brown sugars, and salt. Mix on low to combine.
- 4. Add egg and egg yolk, whisk on high for 30 seconds and let rest for 3 minutes.
- 5. Whisk on high again for 30 seconds and let rest for 3 minutes. Repeat one additional time.
- 6. Add the vanilla and mix to combine.
- 7. Using a spatula, fold half of the flour mixture into the wet ingredients. Add remaining flour and chocolate chips and fold until just combined.
- 8. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
- 9. When ready to bake, preheat oven to 375F and line two baking sheets with baking or parchment paper. Roll 2 tablespoons of dough into a ball and spread out on baking sheet.
- 10. Bake for 11-12 minutes until light brown, then remove to a wire rack until cooled.
