A simple but delicious cheesecake adapted from Bill Voegel.

Tools: Whisk or Electric mixer, (I recommend an electric stand mixer), Measuring cups, Measuring spoons, Spatula, Malet ( or a hard spoon), Plastic Bag, Medium bowl, Large bowl, Zester, Juicer, Parchment paper, and Springform pan (10 ½ inch springform pan)
Crust Ingredients
3 Cups Graham Cracker Crumbs
1/2 Cup Granulated Sugar
1 Cup Melted Butter
Filling Ingredients:
5 (8 oz.) Package Cream Cheese
1 (3 oz.) Package Cream Cheese
1 1/2 Cups Granulated Sugar
5 Eggs
2 Cups Sour Cream
1 1/2 Teaspoons Vanilla
Juice of 1 Lemon
Zest of 1 Lemon
Prep steps
Step one: Get out cream cheese, You want room tempture cream cheese
Step two: Preheat oven to 325 F
Crust steps:
Step one: Take your graham crackers and place them still in their sleeves in the plastic bag
Step two: Close bag and smash graham crackers with malet until it is a fine crumb
Step three: Measure out 3 cups of graham cracker crumbs
Step four: Microwave butter in a medium bowl until melted
Step five: Mix melted butter, graham crackers, and 1/2 cup granulated sugar into the medium bowl
Step six: Line springform pan with parchment paper
Step seven: Press graham cracker crust into lined springform pans until evenly flat
Filling steps:
Step one: In your large bowl add 5 (08 oz.) packages of cream cheese, 1 (3 oz.) package of cream cheese, 1 1/2 cups granulated sugar, and 5 eggs
Step two: Start mixing on a slow speed working your way toward high for 15 Minutes
Step three: Stop and occasionally scrap the sides and bottom of the bowl
Step four: After 15 minutes of mixing stop and add 2 cups sour cream, 1 1/2 teaspoons of vinilla, zet and juice of 1 lemon
Step five: Mix again for another 15 minutes stopping to scrap the bowl
Step six: Pour filling into prepared springform pans
Baking steps:
Step one: Bake 40 Minutes
Step two: Turn off oven and let cheesecakes sit in warm oven for 2 hours
