New Mexico Style Smokey Carne Asada

This Carne Asada is a unique take on skirt or flank steak that has a spicy and smokey flavor. This dish is perfect as the main course, or sliced up for tacos, nachos, and burritos. This recipe was created by Jake Vialpando because he wanted the flavors to mix well without tasting too close to salsa, guacamole, or spanish rice.
- Yield: 8 servings
- Prep Time: 20 minutes
- Marinate time: Minimum = 6hrs, ideal = 24-48hrs
- Cook Time: 10-20 minutes
Utensils:
- Cast iron pan or grill
- Knife
- Spatula
- Marinade tupperware
Ingredients:
- 2 pounds skirt or flank steak
- 1 lemon
- 1 tablespoon Chipotle Powder
- 1 tablespoon New Mexico Red Chili Powder
- 1 tablespoon Black Pepper
- 1 tablespoon Garlic Powder or 2 Garlic Cloves Crushed
- 1 teaspoon Salt
Cooking Steps:
- 1. Combine all spices in marinade container
- 2. Squeeze all juice from lemon into same container
- 3. Mix contents of container well
- 4. Place raw meat into the marinade ensuring to cover all slices
- 5. Place lid on container and place into refridgerator for 6 to 48 hours*
- 6. Remove meat from marinade and palce in cast iron or on grill
- 7. Bring heat up to medium high and cook one side for 2-3 minutes or until slight searing occures
- 8. Flip slices and cook for 1-2 minutes or until searing occures
- 9. Remove meat and slice thinly against meat grain
- 10. Garnish as desired and enjoy
- *Do not marinate over 48 hours because the meat can go bad. Do not marinate less than 6 hours or the marinade will not fully soak in*
