Ingredients:

1: pre-made pie crust (or homemade)
1 cup: sugar
3 tablespoons: cornstarch
1 cup: water
2: egg yolks, beaten
1/4 cup: fresh lemon juice
1 tablespoon: lemon zest
2 tablespoons: butter

Steps:

Step 1: Preheat oven to 350°F (175°C). Bake the pie crust until golden brown (about 10 minutes). Let cool.
Step 2: Make the filling: In a saucepan, mix sugar and cornstarch. Gradually stir in water. Cook over medium heat, stirring until thickened.
Step 3: Temper the eggs: Slowly whisk some hot mixture into the egg yolks, then return to the pan. Cook for 2 more minutes, stirring constantly.
Step 4: Add lemon & butter: Remove from heat and stir in lemon juice, zest, and butter until smooth.
Step 5: Assemble: Pour filling into the baked pie crust. Let cool to room temperature, then refrigerate for at least 2 hours.
