Budae-jjigae
The recipe for a much-requested dish: Budae-jjigae a.k.a “Army Base Stew.”

You Need To Prepare (Ingredients)
- 4 cups (1 litre) chicken stock
- 200g (7 ounces) SPAM
- 250g (9 ounces) tofu, sliced
- 1/2 cup ripened bite sized Kimchi
- 1 pack Shin Ramyun
- 30g (1 ounces) green onion
- 1 or 2 slices cheese
You Need To Prepare (Sauce)
- 1 ounce Korean chili flakes
- 1 ounce rice wine
- 0.5 ounce soy sauce
- 0.5 ounce minced garlic
- 0.75 ounce sugar
- 0.75 ounce Korean chili paste
- A few sprinkles black pepper
- 1 Assemble the main ingredients (except for instant ramen noodles, rice cakes, green onion and cheese) in a shallow pot. Add the sauce in the middle.
- 2 Add the sauce in the middle.
- 3 Pour the stock in the corner of the pot.
- 4 Close the lid and boil it on medium high heat until the stock starts to boil (about 8 mins).
- 5 Add the remaining ingredients. (Instant ramen noodles, rice cakes, green onion and cheese)
- 6 Reduce the heat to low (if you’re cooking on a portable burner and sharing the food at the dinning table).
- 7 Start dishing out soup, protein and vegetables onto your own soup bowl. Serve with steamed rice.
