It is one of my favorite post workout meals as it contains proteins, carbohydrates, fats, vitamins, and more. There is also the fact that it is incredibly easy to make.
Turn on some music from down under and dance if you want to, but don't leave your friends behind. In fact, invite them over for some good damn food; unless you don't have friends. #notall
Take 2 cups of either brown rice or white rice. Cooking time depends on type of rice used. Make sure you check the box or bag the rice came in to make sure you are cooking it properly.
As the timer for the rice reaches around 15 to 10 minutes, begin cooking the tofu.
Pull out a pan and place the heat on medium-high. Place the butter in the pan and let it melt. Cut up the tofu into little chunks and toss it into the pan. Make sure you also throw in the mushrooms at the same time. Add various seasonings. I usually stir it every so often to make sure everything is cooking good.
Pull out the tomato and the avocado. Take a knife and cut the tomato into fun sized pieces. After cutting the tomato, take the avocado and cut it in half, then in half again, and then in half again. Then, take those slices, and cut them in half, and then the smaller ones in half. My God its halfception.
After the tofu has been cooking for around 10 minutes, turn the heat to low and add the cut up tomato, avocado, and rice.
Stir it all together and add some hot sauce to add additional spice. You can also add more seasoning if you prefer.
Grab a bowl and fill it to the top, grab a nice refreshing drink, and enjoy!
