Ingredients:
2 tablespoons lime zest
3 tablespoons lime juice
2 teaspoons chili powder
Coarse salt and ground pepper
8 bone-in, skin-on chicken thighs
1/2 pineapple, chopped
1 English cucumber
Directions:
Step 1
Combine lime zest, chili powder, and salt. Rub chicken all over with mixture. Grill skin side up until chicken is cooked to your liking.
Step 2
Flip chicken. Grill skin side down until skin is crisp.
Step 3
Meanwhile, combine lime juice, pineapple, cucumber, and cilantro to make cucumber salad.
