Butterscotch Squares

A tasty butterscotch alternative to chocolate brownies with instructions to successfully adapt to gluten-free and/or vegan diets.

Ingredients:

  • 1/2 cup butter or margarine
  • 2 cups brown sugar
  • 2 eggs
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla

Instructions:

  1. First, melt the butter in a medium saucepan.
  2. Next, add brown sugar, stirring constantly, until it comes to a boil.
  3. Let cool before adding the eggs.
  4. Once cooled, add flour and baking powder. Mix well, then add vanilla.
  5. Spray baking pan with non-stick spray, then pour in batter, spreading evenly across the bottom of the pan. Then bake at 350 degrees for 30-35 minutes.

Note:

To make vegan and gluten free, I use Nucoa margarine cubes (dairy free), 3 teaspoons of EnerG egg replacer mixed with 4 tablespoons of warm water to replace the eggs, Namaste All Purpose Flour, and an extra teaspoon of baking powder to ensure that the dessert rises appropriately. Almond flour does not allow the dessert to raise, although the flavor is good.
