2. Add the eggs, coconut milk, vanilla extract and whisk together.
3. In a separate bowl, combine the dry ingredients and stir together gently.
4. Pour the wet banana mixture into the bowl with the dry flour mixture and stir well to incorporate.
5. Heat enough oil in a skillet to coat the bottom and heat to medium-high temperature.
6. Measure 1/3 cup of the batter and pour it into the skillet.
7. While the batter is still runny, drop some blueberries unto the pancake in the skillet. Wait a minute (or two) or so, then flip and cook the other side until done.
8. Because these are paleo, they will be bit gummier by nature, but nonetheless delicious! Top with butter, maple syrup, dried coconut, fresh banana & berries, or whatever you have on hand!
