Step 1: In a large mixing bowl, combine 7 cups of all-purpose flour and 1.5 tbsp of salt. In a separate bowl, dissolve 2 tsp of active dry yeast and 1 tsp of sugar together.

Step 2: Pour the yeast mixture and 6 tbsp of olive oil into the flour mixture. Stir until it forms a rough dough.

Step 3: Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

Step 4: Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

Step 5: While the dough rises, crush the 24 oz of canned tomatoes in a bowl. Add a pinch of salt and some chopped fresh basil (reserve some for topping) to the sauce.

Step 6: Preheat your oven to the highest setting (usually around 475-500°F or 245-260°C). If you have a pizza stone, place it in the oven to heat up.

Step 7: Once the dough has risen, punch it down and divide it into 2-3 equal portions. On a floured surface, stretch or roll out each portion into a round shape.

Step 8: Place dough on a baking sheet or pizza peel. Spread tomato sauce over the dough, leaving a border. Tear mozzarella and scatter over the sauce.
