Blini
(Russian Pancakes)
Blinis are simple and delicious Russian-style pancakes that are thin like crepes. They are usually eaten during the Maslenitsa festival. The tradition of Maslenitsa (Butter Week) dates back to pagan times, when Russian people would bid farewell to winter and welcome spring.

Ingredients
- 3 ½ cups flour
- 4 eggs
- 2 cups water
- 2 cups milk
- ½ teaspoon salt
- ½ teaspoon baking soda
- ⅔ cup butter
- 2 tablespoons sugar
- 2 tablespoons olive oil
- oil for frying

Step 1
In a large mixing bowl, whisk the eggs and then add in milk. Add sugar, salt, baking soda, olive oil, and butter. Whisk to combine. Gradually whisk in the flour. Continue to whisk until the flour is fully incorporated and no lumps are visible.

Heat a pan over medium heat. Spray the pan lightly with oil. Pour ¼ cup of batter into the center of the pan and swirl the pan to spread evenly.

Cook for 30 seconds or until the edges are visible golden and lacy looking. Gently flip and cook for another 20 seconds or until the batter is set. Remove to a platter and repeat.
