Colombian Side Salad A perfectly crisp and refreshing salad that elevates any meal!

This Colombian side salad has been a staple of mine from the moment I first had it in the tiny town of Caparrapi, Colombia. (The story of how I ended up there is quite the adventure—imagine a broken-down car with no brakes on the side of a mountain, a bus full of chickens, a 15-hour tow truck ride, and a near head-on collision with a semi! But that's a tale for another time.) This salad not only complements your favorite dishes but also brings a taste of Colombia's rich culinary heritage to your table. Ingredients

  • 1 head of iceburg lettuce, chopped
  • 3 ripe tomatoes, sliced
  • 1/2 purple onion, sliced
  • 1/3 cup of fresh cilantro, chopped
  • 1 english cucumber, sliced in half-moon pieces
  • 4-5 tablespoons of white vinegar
  • 1-2 tablespoon(s) of vegetable oil
  • salt, to taste
  • (optional) 1 avocado, sliced

Instructions

  • 1. In a large bowl, combine the lettuce, tomatoes, onions, cilantro, and cucumber.
  • 2. Drizzle with vinegar, oil, and salt. Add more to taste.
  • 3. Toss gently to combine, taking care not to mash the tomatoes.
  • 4. Garnish with extra cilantro if desired. Serve Immediately!
