What is Bibim Guksu?

Bibim Guksu is a spicy cold noodle dish from South Korea. Bibim Guksu is made using crisp vegetables and a tasty gochujang sauce making it a quick dish for a hot summer day.

Instructions

  1. Mix sauce ingredients in a bowl and refrigerate.
  2. Thinly slice cucumber, carrot, red cabbage, and red lettuce.
  3. Using a medium pot, bring water to a boil. Cook nooles following package instructions. Drain and then submerge noodles in cold water.
  4. Rinse noodles in cold water and drain until they are cold. Divide noodles in two sets and leave them sitting in a colander.
  5. Place noodles in a bowl and arrange vegetables and kimchi according to taste. Sprinkle with sesame seeds and drizzle sesame oil. Serve your sauce over your noodles and place your hard boiled egg.
  6. Mix together and enjoy. Cut your noodles with kitchen scissors if noodles are too long.
