What is Bibim Guksu?
Bibim Guksu is a spicy cold noodle dish from South Korea. Bibim Guksu is made using crisp vegetables and a tasty gochujang sauce making it a quick dish for a hot summer day.

Main Ingredients
- 8 ounces buckwheat noodles
- 1 cucumber
- 1 carrot
- 2 ounces red cabbage
- 2 ounces red lettuce
- 1/2 cup kimchi
- 1 boiled egg
- 1 tablespoon sesame oil
- 2 teaspoons sesame seeds
Sauce Ingredients
- 3 tablespoons gochujang (Korean chili pepper paste)
- 1 tablespoon gochugaru (Korean chili pepper flakes)
- 2 tablespoons sugar
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 clove garlic minced

Instructions
- Mix sauce ingredients in a bowl and refrigerate.
- Thinly slice cucumber, carrot, red cabbage, and red lettuce.
- Using a medium pot, bring water to a boil. Cook nooles following package instructions. Drain and then submerge noodles in cold water.
- Rinse noodles in cold water and drain until they are cold. Divide noodles in two sets and leave them sitting in a colander.
- Place noodles in a bowl and arrange vegetables and kimchi according to taste. Sprinkle with sesame seeds and drizzle sesame oil. Serve your sauce over your noodles and place your hard boiled egg.
- Mix together and enjoy. Cut your noodles with kitchen scissors if noodles are too long.
