Ingredients
1 tbsp olive oil
1 large onion
1 large green bell pepper
2 large sweet potato
4 cloves of garlic (minced)
1 1/2 cup vegetable broth
2 tbsp tamari
28oz can of diced tomatoes
15oz can of black beans
15oz can of kidney beans
1 cup of corn
2 tbsp chili powder
1 1/2 tsp cumin
1 tsp smoked paprika
1 tsp dried oregano
salt
1 tbsp honey
1 tbsp brown sugar
Steps
1. Prep the ingredients; preheat the oven to 400 degrees, chop all vegetables, combine the seasonings.
2. Place chopped sweet potatoes on a lightly oiled cooking sheet and bake in oven for 15 minutes.
3. Heat the olive oil in a large pot and put the onions in and sautee them to your preference. When the onions are halfway cooked, put the minced garlic in the pot.
4. When the onions and garlic are cooked, toss in the diced tomato, beans, broth, tamari and seasoning. Bring to a boil then turn the heat to a simmer and put a lid on the pot.
5. When the sweet potatoes are cooked, put them in the chili pot.
6. Add more seasoning to taste, then let the chili sit for another 15 minutes before serving. Enjoy!
