Pack of Wooden Skewers Measuring Cup Cooking Thermometer (optional) Craft/dry Foam Block OR a Baking Pan and Parchment Paper A Bowl of Ice Water Stove Top Pot OR Sauce Pan and a Mixing Spoon
Fruits of choice (grapes, oranges, strawberries) Marshmallows (optional) 1 cup Water 2 cups Sugar The next ingredients are optional if you want tanghulu to last longer 2 tbsp of Glucose Sugar 2 tbsp of Agar Agar 1/2 tsp of Cream of Tartar
1. Set up either your craft/dry foam block or your baking pan with parchment paper. Set aside. 2. Wash your choice of fruits. Dry them thoroughly. Set aside. 3. Put your pot/sauce pan on a stove-top. Set to “medium” heat. 4. Add all water and sugar (and optional ingredients) to pot/sauce pan. Stir with spoon. Let sit until boiling. Boiling time will be between 10-15 minutes. *Note: Do not stir mixture again. 5. While waiting for the mixture to boil, skewer your fruits (and marshmallows) on the skewers. Do not add more than 4” to a single skewer. Set skewered fruit on baking pan OR stick in foam block. 6. Prepare your bowl of ice water. Set aside. 7. Once mixture begins to boil check the temperature using a cooking thermometer. The temperature should be between 300.2-309.2 °F or 149-154°C. If you do not have a cooking thermometer, check the temperature of the mixture by using an extra skewer - dip the skewer in the mixture, then dip in the ice water. If the sugar on the skewer is crystallized (hard and crunchy), the mixture is ready to use. 8. Once the mixture is ready to use, lower the stove top temperature to “low” heat. 9. Moving quickly, begin covering your skewered fruit with the mixture. Depending on the depth of your pot/pan, you can dip your skewers and twist to cover OR you can use a spoon to scoop the mixture on to cover. Once the fruit is covered, dip in ice water and then place back on pan/in block. *Note: To get a thin shell coating, twist your fruit and let extra syrup fall off before dipping in ice water. To get a thick shell coating, generously coat fruit then quickly dip in ice water. 10. Your Tanghulu is ready to enjoy! To store, use an air-tight container and set in fridge.
