You will need:
- A sharp, small knife
- Plastic wrap
- A refridgerator
Ingredients:
For the sandwich:
- 12 strawberries
- 2 kiwis
- 1 navel orange
- 4 slices shokupan (Japanese milk bread)
For the whipped cream:
- 1 cup heavy whipping cream
- 5 tsp sugar
- 1 tsp rum
Prepare the fruit:
- Step 1: Use a small knife to remove the cores of all 12 strawberries.
- Step 2: Use the knife to cut the ends off both kiwis and peel.
- Step 3: Use the knife to cut the ends off of the navel orange. Peel and separare segments by hand, taking care to remove any pieces of the membrane from each segment.
- Step 4: Set the fruit aside after drying with a paper towel.
Make the whipped cream:
- Step 1: Make an ice bath in the larger bowl, setting the smaller bowl inside. Add 1 cup heavy whipping cream and whisk using a mixer.
- Step 2: Once bubbly, add the sugar and rum, then mix on medium-high speed.
- Step 3: Watch the cream thicken! Keep whisking by hand until the cream has medium peaks.
Assemble the sandwich:
- Step 1: Line up all four slices of bread. Add an even spreading of whipped cream on each slice, reserving some cream for later.
- Step 2: Add the fruit to one side of each sandwich, keeping in mind how it will look when cut diagonally.
- Step 3: Add more whipped cream to fill in the gaps between the fruit.
- Step 4: Sandwich the fruit between the two bread slices, and wrap tightly in plastic wrap.
