Pineapple Upside-Down Cake
Pineapple upside-down cake is a pineapple version of a popular cake where sugar and fruit are cooked in the bottom of a pan, then a silky cake batter is spread over the fruit, so once flipped over after it bakes, the fruit sits on top of the cake.

Ingredients
For the Topping:
- Cooking Spray
- 4 tablespoons unsalted butter
- 1/2 cup packed light brown sugar
- (1) 8-ounce can pineapple rings in pineapple juice
- 8 to 10 maraschino cherries
For the Cake:
- 1 1/2 cups all-purpose flour
- 1 teaspon baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 8 tablespoons (1 sitck) unsalted butter, at room temperature
- 2 large eggs
Steps
- Step 1. Heat the oven to 350 degrees F & coat round pan with cooking spray.
- Step 2. Melt butter and sugar in small frying pan over medium heat, stir frequently until slightly brown. Pour the sugar mixture into thin layer into baking pan.
- Step 3. Arrange pineapple rings from the center of baking pan outward. Make sure to reserve 1/2 cup of the pineapple juice. Place a maraschino cherry into the center of each ring.
- Step 4. Whisk together the dry cake ingredients. Use an electric hand mixer to beat together sugar and butter for about 5 minutes. Should be light and creamy. Add eggs and beat until smooth, about 1 minute.
- Step 5. Add the flour mixture and pineapple juice in alternating batches with mixer on low speed. Spread the batter over the fruit in the baking pan and smooth out evenly.
- Step 6. Bake for 45 minutes until dark golden-brown. Cool the cake for 10 minutes before flipping onto serving plate. Place the serving plate over the cooking pan and use oven mits to flip both the plate and pan over. Slowly lift the pan away.
Ready To Serve Warm or Cold!
