Step 1:
In a medium bowl, stir together flour, oats, sugar, baking powder, and salt. Make a well in the center of the flour mixture; set aside.Step 2:
In another medium bowl, stir in soymilk (or other milk product), oil, crushed banana, and vanilla. Add the liquid mixture all at once to the flour mixture. Stir until just moistened (batter should be slightly lumpy).Step 3:
Slice up the 2 bananas, and add them to the mixture, stirring until they are evenly dispersed.Step 4:
Pour 1 to 1 1/4 cups (or as waffle baker directs) onto the grids of a preheated, lightly greased waffle baker (use a regular or Belgian waffle baker). Close the lid quickly; do not open until done. Bake according to manufacturer's direcions. When done, use a fork to lift the waffle off of the grid. Repeat with remaining batter. Serve warm.
