Beat eggs until light & fluffy. Add oil, sugar, zucchini & vanilla. Mix lightly, but well. Sift flour, salt, soda, cinnamon & baking powder together and add to wet mixture. Mix until blended. Stir in nuts. Pour batter into 2 grease 8x4” loaf pans. Bake 325*for 1 hr. Cool in pans on cake rack for 10 min. Remove from pans & cool on rack.
