Drain salmon. Sauté onion, zucchini and garlic in one tbsp. butter until onion is soft and mixture is absorbed, about 3-5 min. Combine sautéed vegetables with rice, one c. cheese, one lightly beaten egg and salmon. Spoon into one and one half quart casserole dish. Melt remaining 1 tbsp. butter in small saucepan. Blend in flour, thyme, nutmeg & salt. Stir in half & half until sauce is thickened. Beat small amount of sauce with the remaining egg. Pour back into sauce and blend. Spoon remaining cheese. Spoon over salmon mixture. Top with remaining cheese. Sprinkle with paprika. Bake at 375* for 35-40 min. Cool 5 min. before serving.
